2021 Certified Organic Cabernet Sauvignon

This organic Cabernet Sauvignon boasts aromas of fig, strawberry, with hints of tobacco and cranberry on the nose. Alongside bright and rich berry flavors of baked cranberries and blueberries on the palate, the complexity of plum, walnut, cocoa, and dusty earth create an elevated mouthfeel that is balanced with medium dusty tannins and a slight touch of acidity.

WINEMAKER’S NOTES

All the components from this great Cabernet Sauvignon were harvested in mid to late October. We achieved optimal ripeness in the fruit during this growing season with nice cool nights to maintain acidity. All the lots were fermented in upright stainless-steel fermenters with PDM yeast. 100% malolactic fermentation was completed in upright stainless-steel tanks.
